Roast Chicken

I want to dedicate this post to Avi, my friend from Australia. She generously shared with me the recipe for this roast chicken. It is very easy to do. My family and friends love it so much, delicioso!!!

Roast Chicken

whole chicken

1 whole head of garlic, minced

2-3 tbsp dried oregano, finely chopped

2 tbsp. salt

2 tbsp. pepper

1 tbsp. paprika

2 tbsp. oil

juice from 1 lemon

Marinate the whole chicken in all of the above ingredients (best to marinate it overnight). Put chicken into roasting tin or pyrex dish and roast for an hour or so on 400 degrees Farenheit oven. I roasted it for 1 1/2 hours because I like the skin to be a little crispy.

Tip: How to tell if the chicken is cook already? Prick the part between thigh and breast and if clear juices come out it's cooked.

I'm a big fan of roasted chicken but I always bought it from the store/resto. Now, I'm so happy that I finally cooked one (lol).

Lani, grabe photo pa lang ulam na. Roast chicken done at home speaks of celebrations, kahit pang simple dinner lang ito. Craving for roast chicken...

What? The first time? Well, there's no going back now, you'll be hooked. There's nothing quite like the aroma of roast chicken being cooked in the kitchen. The very smell of it makes me drool!

Just a little tip: place quartered onions, cloves of garlic - slightly crushed, a little salt & pepper inside the cavity - if using herbs, add some too. I like eating the boney bits - very tasty!

Korek Watson, ang laki pala ng namiss ko sa buhay ko sa kakabili ng roasted chicken, mas masarap pala pag sa bahay niluto, malasa at malambot ang laman ng chicken, yummy talaga.

You're right, Mae. Thanks for the tip. Next time I'll add rosemary.

im very scared cooking roast chicken - i try everything to keep it moist, but most of the time it gets too dry - but i'll try this recipe and hopefully i won't burn or dry this baby out -

looks nice from your pics!

Barbara, just follow the recipe and you won't burn it. Very juicy ang roast chicken mo.
